Cet article est un point bibliographique sur les connaissances actuelles en matière de mycotoxines pouvant être produites au cours du stockage des céréales, le blé principalement.
Après un rappel sur les conditions de stockage en France (organismes collecteurs et stockage à la ferme), l'article évoque les conditions de stockage des blés favorisant le développement de moisissures (principalement des genres Aspergillus et Penicillium) et de mycotoxines.
Les principales mycotoxines de stockage sont l'OTA (ochratoxine A), la citrinine et l'acide pénicillique. Sont passés en revue les divers types de toxicité pour l'homme et les animaux de l'OTA seule et associée aux deux autres mycotoxines : toxicité aiguë et subaiguë, néphrotoxicité, immunotoxicité, génotoxicité, mutagénicité et carcinogénicité. Enfin les méthodes de dosage de l'ochratoxine sont évoquées. Cet article est le préambule à la présentation d'une étude en cours incluse dans le programme de recherche AQS (Aliment Qualité Sécurité). This manuscript reviews the present knowledge in the field of mycotoxins produced during the storage of cereals, especially wheat.
After a description of the French conditions of storage of cereals (cooperatives collecting bodies and storage conditions in the farms), the manuscript describes the storage conditions leading to the development of molds (mainly Aspergilli and Penicillia) and of mycotoxins.
The main mycotoxins formed during bad storage are OTA (ochratoxin A), citrinin and penicillic acid. The various toxic effects to humans and animals of OTA alone or associated to the two other mycotoxins are then reviewed : acute and sub acute toxicity, nephrotoxicity, immunotoxicity, genotoxicity, mutagenicity and carcinogenicity. The methods for analysis of OTA are then dealt with.
