L'article donne la définition des composés naturels présents dans les aliments. Il est intéressant d'étudier ces toxiques naturels dans la nourriture car ils sont dommageables pour la santé humaine. Tous les points qui peuvent s'y rapporter sont passés en revue. Deux groupes de composés, les mycotoxines et les constituants toxiques naturels proprement dits sont pris en exemple et sont analysés pour justifier de la réglementation adoptée. La procédure légale en vigueur au Royaume Uni est présentée et les problèmes éventuels en relation avec l'évolution de la réglementation dans le cadre européen pour ces deux groupes sont discutés, en rapport avec les conséquences issues des mêmes législations. The definition of a naturally occurring coumpound is examined. The reasons for interest in those natural toxicants considered to be detrimental to human health is discussed together with any concerns that there may be. Two groups of coumpounds, mycotoxins and inherent natural toxicants, are used as examples of natural toxicants and to describe how, and why, such compounds may be legislated for. The legislative process in the UK is described and the potential problems with developing legislation for these two groups are discussed, together with the consequence of legislation. Current regulations are detailled and there is a brief consideration of the future of regulation in this area.
